I reached out to Wilson Combat with this question. KZ stands for Kevlar Zytel. No idea how they came up with that name, however.

Wilson Combat does a lot of custom work including exclusive production runs for different companies. The KZ designation is most likely an exclusive for a company with a name like KZ Firearms or something like that.
